Muffins for Breakfast, or Cupcakes?

Another fancy breakfast which I sometimes make for myself are little cupcakes/muffins. To be honest I don’t know the difference between the two but basically we often have some frozen berries which I add to a regular cupcake recipe and it makes these delicious buddies which are amazing with a cup of coffee.

I used this flemish cupcake recipe from, here’s the translation:


125g butter

125g sugar

2 eggs

125g self-raising flour

a little milk

frozen raspberries


Make sure the butter is room temperature and not straight from the fridge. Mix with the sugar until light and kind of fluffy. Then add the eggs and everything else and you’re pretty much done.

Put in muffin tin and then pop in the oven for a while until done.
